The mesh number is the detail worth explaining. Matcha is stone ground and mesh counts how fine the resulting powder is, with a higher number meaning smaller particles. Grades above 1000 mesh dissolve into liquid rather than settling out of it, which is what lets matcha go into a jelly without leaving grit in the set.

The pairing is narrower than the coconut jelly. Matcha against fruit fights, matcha against matcha doubles up, and matcha against a plain milk tea is where it belongs. That last combination is genuinely good and costs less than most people expect.
Sweetness in the jelly is fixed and does not move with the sweetness level you pick for the drink. Order a milk tea at half sugar with matcha jelly in it and the cubes stay exactly as sweet as they were made, which is worth knowing if you are cutting sugar seriously.
