Sago and tapioca get confused constantly. Traditional sago comes from the pith of the sago palm and tapioca comes from cassava root, and most of what is sold as sago pearls today is actually made from tapioca starch shaped into tiny beads. What separates the two on a drinks menu is size rather than source. Sago pearls are 2 to 3mm across where bobo is closer to 8mm.

  • A white dot in the centre means it needs more resting time, not more boiling.
  • Hold in cold water for up to 4 hours. Any longer and the pearls bloat and go soft.

Variations

  • Steep in syrup after rinsing for a sweetened version closer to bobo.
  • Cook in coconut milk for the last 5 minutes for a mango sago dessert.
  • Use larger pearls for more chew, though they need closer to 45 minutes.
